INGREDIENTS ...

2 very large Eggplants / sliced in 1/4inch thick
1 ( orange size ) large Onion / diced
1 very large Bell Pepper / diced
2 to 3 large ripe Tomatoes / diced
4 to 5 cloves of Garlic / slivered or chopped
1 1/2 c Water / more if need to have a juicy sauce.
3 to 4 Pita Breads / torn to bitesize pieces

SPICES ... More will be added to your own taste later on.
This is to start you off with.

1 tsp. Smoked Paprika
1 tsp. Coriander/ kuzbara
1 tsp. Allspice
1/4 tsp. Aleppo Ppper
1 1/4 tsp. Nutmeg
1/2 tsp. Cinnamon
1/2 tsp. Thyme Leaves
1 1/2 tsp. Oregano
Salt & Black Pepper to taste

TAHINI SAUCE ...

1 cup Tahini / if need to make thicker? add more little at a time
2/3 cup Water
3 to 4 tsp. freshly squeezed Lemon Juice / more or less up to you
1/2 tsp. Salt / orto taste
